Apple Date & Spelt Muffins

hey y'all!! fun news..... exams are over!! and in those moments between freaking out about studying and procrastinating (....more like procrastibaking) i have begun thinking about the christmas period (woooo!!) which every year seems to just get longer and longer......and i'm okay with that. 

i've spoken on here about my love for the festive season before so i won't bore you with that, but the streets have begun to look christmassy, youtubers are talking about vlogmas, adverts are on tv and christmas catalogs are arriving in my mailbox like no tomorrow. i'm really happy in fact that the weather in melbourne has been staying cooler as we approach december because it means that i can bust out my festive jumpers at the correct time of year.

note to self: when in the northern hemisphere, don't buy festive jumpers because 30 degrees is not the time for heavy wool. even though you'll wear them anyway. 

with school wrapping up for the year and my free time expanding, it means i have some more time to focus on the blog! so expect some more fun recipes coming your way :) i'm thinking of starting a blog series here continuing the weekend drinks theme from a few weeks ago, especially as summer is coming for us aussies down under!! 

you may have noticed that it's almost been a month since i last posted in this space - and in that time a lot has happened. these muffins were ready to be shared with you all last weekend, but it felt trivial and just wrong to share snapshots of my life and a yummy recipe, when people all over the world were fighting and raging war. the thoughts of the people should not have been with the musings of a 16 year old, rather with those who need them the most. 

but as they say, time heals all wounds, and we must learn to step forward into a new tomorrow, leaving behind the terrors of the past - but never forgetting them and the lives they changed. so as we move into the festive season - no matter what you celebrate - i think it's important to take a moment to, in the hilarity and ridiculousness of the december times, think of the bigger picture. 

also eat a muffin. cos i mean, brain food. 


Apple Date & Spelt Muffins

{makes 12 muffins}

ingredients 

2 tb chia seeds

250ml almond milk

1 tb baking powder

1/4 c almond meal

1/3 c cornmeal/maize flour

1 3/4 c spelt flour

1/4 c coconut oil

1/4 c maple syrup

1 tb vanilla extract

2 apples, finely chopped

1/2 c dates 

1 tsp nutmeg

1 tsp allspice

1/2 c muesli of choice

method

preheat your oven to 180 degrees C and line a muffin tray with cases. 

start by placing your chia seeds in a small jug, along with half of the almond milk. leave to stand for 10-15 minutes until the chia seeds swell in size and the milk is mostly absorbed. 

in a large bowl, combine the baking powder, almond meal, cornflour, spelt flour, maple syrup, coconut oil, dates, apples, allspice, nutmeg and vanilla. add the chia seeds and the remaining almond milk and gently stir with a wooden spoon. 

make sure to fold the batter as little as possible, otherwise your muffins will be dense and hard - you want to keep the air in! 

divide your batter evenly between 12 muffin cases in a muffin tray. sprinkle each muffin with some muesli. bake for 15-20 minutes or until cooked through/ a skewer comes out clean. leave to cool completely before storing in an airtight container. the muffins will keep for 3-4 days at most and are best served warm after day 2.
