Raspberry & Almond Pancakes

i was on a tram the other day and, unsurprisingly my seat was weirdly damp. and that got me thinking - why is this seat wet? better yet, why are all tram seats always damp??? are there little fairies that come along with sparkly water guns and spray the tram seats? where do they buy their sparkly water guns? can i have one too? are they friends with the tooth fairy? do they have beef with santa clause? 

i mean, you'd think that in a society where we can buy entire islands in the pacific and genetically modify future generations that we'd be able to stop damp public transport seats - but apparently that is not the case. 

you see these are the things that i think about when on school holidays. because frankly, i don't have to think about anything else. i mean, lord forbid that i think about my large pile of holiday homework or end of year exam preparations. no, instead i think it vital that in order to let my brain cells recuperate, i focus my attention on small trivial matters like the dampness of my tram seat. 

somehow studies show that the intelligence of a child actually increases during the term breaks, so perhaps we should all think about stupid and unnecessary things once in a while instead of focusing on history essays and how many watermelons i'm left with according to my graph.  (0 is the answer by the way. i have 0 watermelons because they are out of season. take that quadratics.)  

anyway, there is no real point to this ramble other than to celebrate the feeling of having no urgent items of the to-do list and to share with you this cracking pancake recipe. because a sunday morning without pancakes is just a boring extension of saturday afternoon.  

notes: these pancakes are delicious and are perfect for a lazy sunday breakfast. they do, however, cook extremely quickly. so it's important to keep the pan on a low heat to ensure they are cooked all the way through and not just burnt on the outsides and raw in the middle. additionally, the berries could be subbed out for whatever is in season for you (strawberries and blueberries taste really good too in pancakes!!) - i trust your decision making skills :) happy flipping!


Raspberry & Almond Pancakes

{makes 12 mini pancakes | gluten + dairy free}

ingredients

3 egg whites

1 tsp vanilla

1 ripe mashed banana

3/4 c almond meal

1/2 c maize flour

1 tsp baking powder

1 tb amaranth flour

1/2 c frozen raspberries

topping of your choice

method

in a small bowl, whip your egg whites until soft peaks form. add in the vanilla, beat for a minute and set aside. 

sift your almond meal, maize flour and amaranth flour together. gently (i mean gently!!) fold in the egg white and mashed banana. 

preheat a non-stick pan over high heat. reduce the heat to medium-low. place a tablespoonful of the batter on the pan and sprinkle a few raspberries on the upwards-facing side. after about 1 minute, flip the pancake (raspberries now facing down) and cook for a further 2-3 minutes or until cooked through and golden brown. 

repeat until all the batter is used up. serve topped with garnished and/or syrups of your choice.
