NEW BEGINNINGS + 2014 FAVOURITES + CAKE FOR MOLLY

this post is a post of beginnings!  happy new year y'all! 

i'm not really one of those people to have new year's resolutions but if i did, here's what they would be: 

1. to be decisive when it comes to sorting out all the junk in my room as we move into the new house!!

2. to be more grateful and positive about life in general 

3. to master call of duty on the xbox 

4. to kick butt in my sixth grade piano exam and my classical singing exam by practicing more....or at all

5. to take more photos!! polaroid, digital, epic bad selfies... you name it and i'm taking it!! 

i'm starting a new series (is that what they're called??) based on my european travels earlier this year. before i started blogging, in june/july '14, i went on a european choir tour with my school. we had the best time and made some fab memories to last a lifetime. i was lucky enough to visit these cities: amsterdam, paris, munich, salzberg, vienna & prague. ooh and an evening out to slovakia. ahh fun times.

each post will be dedicated to one city in particular, highlights, do's and don'ts etc... so amsterdam, step up to the plate! (i believe that's a sports metaphor....? we don't play baseball here in australia) stay tuned for those!! one will be coming out each wednesday for the next few weeks. 

in other news, last week molly from mynameisyeh got married!! yay!! so this cake is dedicated to her and her new husband eggboy. congratulations mr and mrs egg!! molly is by far one of my favorite bloggers and i'm so happy for her. if you haven't already, you should definitely check her out!!

note: for this recipe, i used a rectangular tin 30x22 cm (12" x 8") and then cut the cakes into smaller circles to create one mini cake and many extra mini-cakes. should you want to make one(or all) of the cakes their own, use a circular standard cake tin. the red velvet is based off this one here and funfetti off these ones here and here. 


Neapolitan mini-cake

{for the newlywed molly yeh}

ingredients

for the chocolate layer

185g unsalted butter

125g sugar

3 tablespoons golden syrup

250ml milk

1 1/2 cups (185g)  self-raising flour 

3/4 cup cocoa powder

 

for the red velvet layer

235g self raising flour

15g dutch cocoa powder

250g castor sugar

1/4 tsp table salt

280g  unsalted butter

4  free-range eggs

3 tbsp milk

1 tbsp red food colouring

3 tsp vanilla extract

1 tsp bi-carb soda

3/4 tsp white vinegar

 

for the vanilla funfetti layer

180 g plain flour

160g sugar

2 tsp baking powder

1/4 cup milk

2 eggs + 2 egg whites

130g unsalted butter

1 1/2 tsp. vanilla extract

1/2 cup sprinkles

 

for the buttercream icing

350g unsalted butter

700g icing sugar

2 tablespoons milk

2 tablespoons vanilla essence

 

 

method

preheat oven to 160 degrees celsius

to make the chocolate layer. combine dry ingredients in a large bowl. 

over a low heat, combine the wet ingredients until butter is melted and sugar dissolved. make a well in the dry mixture and pour the wet mix in. mix until combined using a wooden spoon. 

pour into a line tin and bake for 30 mins or until a skewer comes out clean and cake springs back at touch. 

leave to cool completely.

to make the red velvet cake, sift flour, cocoa powder, bi-carb soda and salt into the bowl of an electric mixer. 

add the butter, crack the eggs then mix on high speed for five minutes or until thick, pale and creamy. add the milk, vinegar and vanilla essence, then mix on high speed for another 10 minutes. add the food colouring and mix until evenly distributed. mixture should be a bright red colour. 

bake in a tin lined with baking paper for 50-60 minutes or until a skewer comes out clean. if the top begins to burn, cover with foil and continue baking. 

leave to cool completely. 

to make the funfetti cake, combine all ingredients except the sprinkles in the bowl of a mixer and beat for ten minutes on high speed until pale, thick and creamy. gently fold through sprinkles, making sure that they are evenly distributed. 

pour mixture into a lined tin and sprinkle extra sprinkles on top of cake. bake for 20-25 minutes or until a skewer comes out clean. 

leave to cool completely. 

to make buttercream icing, cream butter in an electric mixer until pale and fluffy (5 mins at least). add the icing sugar, one cup at a time, mixing well between each addition. add milk and vanilla and mix for another 5-8 minutes until thick and creamy. store in fridge for up to a week. 

to assemble cake, using a cookie cuter, cut circles out of each layer. pipe buttercream between each layer and crumb coat and ice the sides if desired.
